    ginger nut biscuits
  • 70 g
    butter
  • Pinch
    sea salt
  • 500 g
    cream cheese
  • 150 g
    caster sugar
  • 200 g
    pumpkin puree
  • Orange zest
  • Cornflour
  • Pinch
    Cinnamon, ginger, nutmeg & cloves
  • eggs
  • 100 mL
    sour cream
  • vanilla

Method

  1. Base - Crush biscuits, mix with butter, bake.

  2. Filling - Beat ingredients until silky smooth.

  3. Bake until centre has a gentle wobble.

  4. Cool completely, then refrigerate overnight.

  5. Top with whipped cream and maple pecan brittle.

Try butternut squash instead of pumpkin
