While travelling, we discovered that some of the most memorable meals weren’t served in fancy restaurants, but in small family kitchens where recipes had been handed down through generations. This rich black bean stew reminds us of those simple meals—fresh herbs, warm spices, and bowls served with a smile.

2 tbspavocado oil

1yellow onion finely diced

1red capsicum finely diced

1poblano pepper (or green capsicum)

Step 1 — Build the Base
Sauté onion and peppers in avocado oil until soft and beginning to caramelise.
Step 2 — Build the Flavour
Add garlic, coriander stems, cumin, oregano and cayenne. Stir until fragrant.
Step 3 — Simmer
Add tomatoes, beans and stock. Simmer gently for 20 minutes.
Step 4 — Thicken
Mix masa harina with warm water and stir through.
Step 5 — Finish
Add lime juice, chopped coriander leaves, season to taste.
