
Pork Chile Verde

This family favourite - Pork Chile Verde - is an excellent recipe from The New York Times Cooking App. Tangy and full of spicy heat it pairs well with plain basmati rice, pico de gallo and a topping of queso fresco.

3Poblano Chiles, stemmed

1Jalapeño, stemmed

1 loosely packed cupCoriander leaves and stems. Plus extra chopped leaves for garnishing

750gmPork shoulder or butt, cut into 3cm cubes

- Heat grill (oven) on high and set the rack approximately 15cm from the heat. On a large rimmed baking tray- combine tomatillow, poblanos, jalapeño, garlic cloves and 1 tablespoon of olives oil; season with salt and toss to evenly coat.
- Grill the mixture, turning halfway through, until nicely charred. Approximately 15 minutes. The vegetables should be reasonably blackened/charred.
- Transfer the poblanos to a small bowl and cover with plastic wrap or seal in a small re-seable bag. Let them steam for 5 minutes
- Peel the poblanos and discard skins. In a blender, combine the charred ingredients - poblanos, tomatillos, jalapeño and garlice. Ensure you scrape the accumulated juices from the baking tray. add the coriander and purée until smooth.
